This soup is my go to whenever I feel a cold coming on or when there is a change in season. I play around with this recipe everytime I make it, but here is the original recipe packed with oh-so-good for you nutrition.
2 cups kale
1 cup vegetable broth (homemade is best)
2-3 cloves garlic
1/8 cup onion
3 tbsp olive oil
Juice from 1/2 lemon
3 tbsp mellow white miso paste
You can add in quinoa to make this a more hearty, satisfying meal.
Always use organic, locally-sourced, and fair-trade when possible!
